Scope of Job

Reporting to the General Manager and Assistant General Manager:

Responsible for maintaining the highest level of hospitality and guest satisfaction in assigned venue with focus on bar, events and dining. Ensures top quality food and beverage quality. Schedules, monitors and adjusts proper daily staffing levels based on sales forecasting. Maintains proper staffing and training of all FOH employees. Holds upbeat, informative Alley Rallies prior to every shift. Coordinates and executes all parties and events with Events and Group Sales Manager. Assists with all other projects as assigned by General Manager.

Job Duties

  • Responsible to assist in achieving all dining and bar sales targets, labor costs, FOH training and Hospitality standards.
  • Anticipates the need for new FOH staff and executes the recruitment, hiring and training.
  • Assures all standard operating procedures are upheld
  • Proficiency in all FOH POS functions - Perform and document voids and comps properly. Follows proper procedures during computer crash for operation.
  • Sales - Responsible to meet bar sales targets through well designed bar menus and planned bar promotions
  • Labor -Control labor during shift. Assess sales volume and make cuts where and when necessary. Eliminate/minimize any overtime and training expenses. Anticipates and executing the recruitment, hiring and training of new FOH staff.
  • COGS - Assures all items are properly rung by service staff.
  • P&L Review- Review P&L monthly with GM in order to form a basic understanding monthly targets. Assist with determining how to meet all targets.
  • Occasionally may lift moderately heavy to heavy objects (up to 165 pounds) during the course of the workday
  • Service- Ensure hospitality and service standards are being met at all times. Determine the quality of the staff by assessing daily performance with management team. Ensure staff demonstrates proper hospitality standards. Handle all guest complaints quickly and properly
  • Food Quality- Ensure food handling and presentation procedures are upheld during your shifts. Conduct line checks on your shifts.
  • Sanitation - Insures that FOH and BOH cleaning lists and schedules are being completed for your shift. Conducts a daily walk-through of venue checking that venue is in safe and top order to receive guests. Follows-up with quality of cleaning crew.
  • Repairs & Maintenance- Maintain the facility by informing GM of any needed repairs. Ensure any warranty work is done by the correct vendor and the bill is properly priced to reflect work covered by warranty.
  • Training and Development - Conducts informative Alley Rallies on every shift to insure all employee training is ongoing and proper programs are being followed. Ensure all new employees have completed required tests and certification programs. Employee development is achieved through observing individuals during shifts and using observations for coaching sessions. Ensuring that standards are being met. Practice employee coaching and counseling daily through frequent oral and written feedback.
  • Completes employee performance reviews on time and uses those to create action plans for personal development
  • Ensures all employees maintain a professional atmosphere during shift; follow-up on all complaints of harassment and report immediately to GM
  • Maintains open door” policy with employees
  • Enforce proper safety practices. Follows proper procedures for all employee and guest accidents or incidents Maintains proper files of required paperwork for worker’s compensation issues Maintains OSHA log and all federally required posters for employee review
  • Assure all new hire paperwork is correct and complete
  • Responsible for presenting a professional and ethical management posture by consistently exercising fair and honest judgment and assessing problems in a professional manner in order to gain the respect of employees and co-managers
  • Maintains constant communication with management team through meal period meetings, and daily use of manager’s log and email communications.
  • Utilizes manager’s log to document employee issues (lateness, tardiness, and performances issues), food issues (items out of stock, line check notes and about quality), and sales, labor and other pertinent information.
  • Follows proper cash handling procedures, including cash-outs, counting banks and counting safe
Education/Training Requirements

Hospitality Degree or Bachelor’s degree or five years of experience in high volume restaurants and events; Two (2) years entertainment venue desired.

Minimum five (5) years of experience with a minimum of two years’ experience in high volume Entertainment Venue management

Additional Requirements

Serve Safe and TIPS, Learn to Serve and First Aid Certification desired

Proficient in MS Word and Excel

Proficient in Aloha and Micros

Some technical knowledge of bowling equipment preferred

Training certification and experience desired

Must be available to work weekends, holidays days and nights as business dictates
